Valse in Italian is a form of the word Valore, or "brave".
In Latin, it means "False"
Tartare is both a form of the word Tartar, which is a people from the Steppes region of Russia, or, alternatively, means "raw"
So, my thinking is that Gourmet Volse Tartare means something to the effect of "False Raw Gourmet" or "False Raw Food". Make sense?
