Why does the soundtrack not have the same beginning (The Ring Theme) as the film? The Two Towers and Return of the King soundtracks have it. Why is it different?

Because the prologue was a last-minute thing   Thursday, August 12, 2004 (12:41 p.m.) 

The prologue was something Peter Jackson cut together in the very last minute. Howard Shore wrote new music for it after the Soundtrack was already in production. It's that simple.
