Do not despair yet. According to a post on TheOneRing.net, there are rumors that the LOTR cast are returning to New Zealand next year to shoot MORE scenes for LOTR. It is possible that this is for the ROTK extended edition, but there is speculation that it could also be for a special boxed set with totally new scenes. Peter Jackson had said pre-FOTR that he had wanted to film the Tom Bombadil scenes and there is speculation now that these reshoots could include that.
