Nonesuch Records put out very good compilations (re-recorded) for composers such as Alex North (various scores, represented either by a single cut or a suite), Leonard Rosenman (a suite each from East of Eden and Rebels without a Cause), Toru Takemitsu (suites) and Georges Delerue (haven't heard).

There are plenty of film-/series-specific compilations of course that sometimes are by a single composer, but I doubt that's what you're after.
