To my opinion Hannibal and Red Dragon are both great scores, and they fit both perfectly with the movie. Hannibal also is another type of movie than Red Dragon. Hannibal is about Hannibal Lecter, he is the main character in that movie, and not in red Dragon, where he's an additional character. The music of "Hannibal" fits perfectly with the character of Hannibal Lecter, he's a real artist, you know! So they're very good. And I think that the weakest score of whole the series is Silence of The Lambs, not very well orchestrated to my feeling....

Or would you've been more pleased with a score from James Horner, with a theme of Braveheart, or Bicentennial man, or A Beautiful Mind....
